Grandma Hall's Rhubarb Jam (Jeff's grt grma on my side)
4 c. rhubarb (cut up) 1 sm.can crushed pineapple
4 c. sugar 1 pkg. strawberry jello
cook rhubarb and sugar together for 12 mins, stirring constantly.
add pineapple including the juice, cook for 3 more mins. remove from heat stir in jello, until completely disolved. pour into jars and seal with paraffin wax. this also freezes well.
last time i used the crockpot, because i had other things going too... plus i added 4 c. frozen strawberries (w/o sugar) and doubled the pineapple and jello. i wouldn't change the sugar, i did, and didn't need to. rhubarb wasn't breaking up like i wanted it too so i took the mixer to it. doesn't get real thick, but oh so good...
