Pumpkin Spice Protein Cookies

My protein powder adds vitamins, minerals, prebiotics, digestive enzymes, and amino acids!!! And.... bonus! Kids love these!

▪️2 eggs
▪️1/2 cup sugar (or you could use Truvia baking blend!) (I would say this is optional, and I will be omitting it, or using honey or pure maple syrup)
▪️1 cup of Lean
▪️2 tsp molasses
▪️2 tsp baking soda
▪️1/2 tsp salt
▪️2 cups flour
▪️dash of cinnamon and nutmeg if using Pumpkin lean flavor
▪️1 cup dark or semi-sweet choc. chips

Preheat oven to 375°.
In a mixing bowl mix together the sugar (or sugar substitute) with the
eggs beaten, and molasses until well combined.

Add the lean protein powder, baking soda, salt, cinnamon, nutmeg, and flour.

Fold in the chocolate chips until everything is combined. 🍫

Bake at 375° for 8 to 9 minutes or until the edges start to get golden brown!


Pumpkin Spice Muffins ~ Whey version

2 cups rolled oats divided
1 cup pumpkin spice lean
1 cup pumpkin pure canned
2 eggs
1 cup milk of choice ( I used almond milk)
1 1/2 tbsp ground cinnamon
2 tbsp maple syrup
1 tsp baking powder


1. Preheat oven 350 f
2. Prepare a muffin pan with paper cups or grease with coconut oil
3. Important: turn 1 cup rolled oats into a fine flour using a food processor about one min
4. In large mix bowl, mix all of the ingredients and stir well
5. Divide the batter among 10-12 muffins tins, filling them all the way to the top
6. Bake for 18-20 min or until golden brown and a toothpick inserted in the center of one of the muffin comes clean
You can add chocolate chips or raisin!! I did added chocolate chips it is so good!
