1 large Apple Peeled & thinly sliced
2 eggs beaten
1 tbsp sweetener (calls for Truvia, I used Xylitol)
1 tbsp vanilla
Cinnamon to taste
Heat a non stick frying pan and add apple slices. Fry with water if you wish until softened. Add vanilla and Xylitol and stir. Allow to cook 2 more minutes. Pour beaten eggs over & cook until done.
