Lemon Poppers

Actually a generic recipe for poppers!

4 scoops vanilla protein powder (each scoop is 5 Tbsp)
1 Tbsp sugar free lemon pudding powder
1/4 cup plus 2 Tbsp unsweetened almond milk
3/4 cup eggbeaters (not just the whites)
1 Tbsp olive oil
1 tsp baking powder

When baking, mix the batter in between batches; I think with the regular eggbeaters it becomes a tad problematic if you don't do this as they are more "binding" in nature than the egg whites and tend to thicken up if not stirred in between batches.

Bake at 350

Here's the key:

First, I'm hoping you have an oven with a glass window so you can see inside without opening (if you can't, no biggie, as they "fall" or "deflate" anyway).

I wound up baking for THREE minutes!!!

The key is in knowing when to pull them out of the oven. 

What I discovered was that they will rise as they cook (at about the 2 minute point) and then when the first in the batch starts getting "dimpled" like it's going to deflate and deflates just a very small amount, PULL THEM OUT IMMEDIATELY.

They're not dry at all this way. I think the reason for that is a combination of the oil, increasing almond milk and reduced baking time.
