Slow-Cooker Salsa Chicken

Ingredients

    2 pounds (32 ounces) chicken breasts, boneless and skinless 1 cup salsa, homemade or purchased 1 cup petite diced canned tomatoes (choose low-sodium) 2 tablespoons Taco Seasoning  1 cup onions, diced fine 1/2 cup celery diced fine 1/2 cup carrots, shredded 3 tablespoons sour cream, reduced fat

Having lost 143 pounds on SparkPeople, she is always on the lookout for healthy recipe ideas, but they have to be quick and easy. “I'm not a good cook,” she confesses, but this is one dish she serves regularly without worry. She's not the only member who's making this for dinner: the recipe has been rated more than 2,700 times!

Salsa Chicken is easy to make; just put all the ingredients in a slowcooker and let the machine do the work. There are infinite variations, and your family is guaranteed to like each one.
6-8 hours to prepare; 15 minutes of active cooking time
Makes 8 one-cup servings of chicken.


Place the chicken in a slow cooker. Sprinkle the taco seasoning over the meat then layer the vegetables and salsa on top. Pour a half cup water over the mixture, set on low and cook for 6-8 hours. The meat is cooked when it shreds or reaches an internal temperature of 165°F. When ready to serve, break up the chicken with two forks then stir in the sour cream.
Makes eight 1 cup servings.

Green Chili

1 Large Tomato diced
Pork Butt
12 chilies (remove skin and most of the seeds) - slice up
Water
1 tbs cumin

Toss in the crock-pot for 8-10 hours on high.  Throughout the day, start shredding up the pork.  Add flour to thicken the sauce to your liking in the last hour of cooking.  Be sure you don't get clumps!

Turkey Chili

2 Lbs ground turkey - brown
15 oz can Chili Beans
15 oz can green chili flavored diced tomatoes
1 pkg chili mix
8 oz tomato sauce
4 oz diced green chilies

Combine and simmer on the stove for 1 hour or cook in the crock-pot all day on low.

Taco Soup

1 Lb Hamburger
1/2 C Chopped onions

Brown and drain grease

1 sm.can chopped green chilis
1 sm can tomato paste
14 ox can diced tomatoes
1 can corn
3 cans assorted beans (kidney, pinto, black - drained and rinsed)
1 pkg taco seasoning
Add about 2 cans of water.

Put all in a crock-pot for the day or simmer on stove for at least 1 hour.

Chicken Spinach Soup

14 oz can of chicken broth
2 C sliced onions
2 C sliced carrots
10 1/2 oz Can Cream of Chicken Soup
10 oz frozen spinach (thawed and drained)
4 C Chopped Chicken
Egg Noodles

Combine all the ingredients except the egg noodles and put them in a crock pot on low for 8-10 hours.  About 20 minutes before you are ready to eat either cook the egg noodles or put them in the crock pot to cook.

You can also just combine all the ingredients and bring to a boil for a quick dinner.

Chicago Beef - Crock Pot


1-2 onions sliced
2-5 lbs of beef brisket or chuck roast
2 cans beef broth
1 pk of onion soup mix
1-2 cans beer (more if you are drinking any)
2 jars drained pepperonziny peppers
garlic and italian herbs to taste
 
Add everything to a crock pot and cook for 10-12 hours on low or 6 hours on high
 
Shred the beef when fully cooked and then add back into the crock pot.
